For years I bought commercial taco seasoning packets; they were easy to use and had a nice taste. But the price kept going up. These days one of those packets adds nearly $1 to the price of a family taco dinner – actually $2 because I often use 2 packets. In reading the ingredient list on the back I discovered that I had all the herbs and spices in my spice drawer! (BTW I never buy those cute little jars of spices. Well, I bought them once – so I would have the cute little jar. Now I simply refill them from my herb garden or the bulk bins.)
1/2 cup dried minced onion
3 Tbs garlic powder
1/2 cup chili powder
6 Tbs ground cumin
2 Tbs paprika
3 Tbs sea salt
3 Tbs sugar or equivalent substitute, optional
2 tsp ground black pepper
Measure ingredients into a medium mixing bowl and stir well. Transfer mixture to a pint jar with a lid. Label and use within 1 year.
Directions for Tacos or Fajitas:
Brown 1 lb. ground meat or sirloin tip steak. Add 2 Tbs. Taco & Fajita Seasoning Mix and 2 Tbs. water; stir well. (If making Fajitas add sliced peppers and onions.) Simmer 10 minutes to release flavor.
Yield: about 2 cups mix, enough to season 8 lbs. of meat.
