This recipe is easy to prepare in quantity and such a godsend when you’ve had a busy day and need to get dinner on the table NOW. G.F. pasta or cooked brown rice can be substituted for spiral pasta to make a gluten-free dinner.
Recipe is taken from PNW 296 Freezing Convenience Foods, a great little booklet available through OSU Extension at extension.oregonstate.edu. Use it as a template to create your own freezer meals.
1 small chicken breast or 2 thighs, boned and diced
2 tsp olive oil
1 cup uncooked spiral pasta
2 cups frozen mixed vegetables
2 tsp chicken bouillon
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp paprika
1 tsp parsley flakes
2 Tbs. Parmesan cheese
Decide how many batches you want to prepare and multiply the ingredients accordingly. Each batch serves 2.
Stir fry chicken pieces in olive oil in a saute pan over medium-high heat until almost done.
Cook pasta in boiling water until almost done. Drain and rinse in cool water.
Combine pasta, chicken, and vegetables in a freezer bag, freezer container, or wide mouth quart size canning jar. Put seasoning ingredients in a small zipper top bag or foil packet. Place packet in jar. Label and freeze up to 4 weeks.
To cook Skillet Meal:
Heat a 10 inch skillet over medium-high heat; add 1 tsp olive oil. Stir and cook contents of Skillet Meal-in-a-bag until hot, adding a bit of water if needed. Stir in seasoning near the end of cooking time; mix well. Serves 2.
