1 lb. extra lean ground beef, ground turkey, or Italian Sausage
1 large loaf unsliced whole grain French bread
Olive oil spray or 2 Tbs soft butter
8 oz. can tomato sauce
1 3/4 cups shredded mozzarella cheese, divided
1/4 cup chopped green onion
6 oz. can chopped black olives
1/2 tsp dried oregano
1/2 tsp sea salt
1/8 tsp ground black pepper
2 tomatoes, thinly sliced
1 bell pepper, thinly sliced
Heat the oven broiler with a rack in the upper center position.
Crumble ground beef into heated skillet and cook until browned through. While it is cooking, cut the loaf of bread in half lengthwise with a long serrated knife. Mist cut sides with olive oil and place on broiler pan or large heavy-duty cookie sheet. Place pan under the broiler to toast the bread, watching carefully. It helps to keep the oven door open a few inches while this is going on. When done, remove pan from oven and reduce oven temperature to 400 degrees F.
Add tomato sauce, 3/4 cup mozzarella cheese, green onion, olives, oregano, salt, and pepper to the browned beef in the skillet and mix well. Spread mixture atop toasted loaf halves.
Decorate the tops with alternating slices of tomato and bell pepper. Sprinkle with remaining cheese. Bake 20 – 25 minutes, until cheese is bubbly and filling is heated through.
