1 cup quinoa
Place quinoa in a quart jar, add lukewarm water to nearly fill the jar, cover with a sprouting lid or piece of fine nylon netting secured with a rubber band and soak 8 hours or overnight. After soaking, drain the water from the quinoa seeds, rinse, and drain again. Sprout the quinoa for 12-24 hours by letting the jar rest on its side on the kitchen counter in a spot with good air flow. Rinse quinoa twice a day during this time. When quinoa sprouts tiny “tails” as long as the width of the seed it is ready to proceed with the recipe.
1 cup chia seeds
3/4 cup flax seeds
1 cup sesame seeds
4 1/2 cups water
Combine chia, flax and sesame seeds in a bowl and soak at least 20 minutes.
1 small yellow crookneck squash or zucchini
2 stalks celery
Juice of 1/2 lemon
1 Tablespoon salt
1 cup water
1 Tablespoon fresh parsley
3 Tablespoons mixed fresh herbs of choice (such as basil, thyme, rosemary, chives)
Puree squash, celery, lemon, salt and water in Vita Mix or blender until smooth. Add parsley and herbs and pulse to chop.
Combine sprouted quinoa, soaked seeds and vegetable puree in a large bowl stirring well to make a homogenous mixture
Prepare dehydrator trays by covering the screens with parchment paper.
Pour about 2 1/2 cups mixture on prepared trays. Spread about 1/4-inch thick with a long offset spatula (the kind used to base ice a cake) in a square-ish shape. Try to spread it a bit thinner in the center and a bit thicker at the edges for even drying.
Place trays in dehydrator set for 105-110 degrees F and dry 12 hours.
Slide cracker sheets with their parchment paper backing one at a time on a cutting board and use a chef’s knife or pizza cutter to cut crackers of desired size.
Return crackers to dehydrator (in a single layer) and finish drying, about 4 more hours. Crackers will be perfectly dry and crisp when done.
Cool crackers completely and store in an airtight container, like a 1 gallon glass cracker jar for up to 3 months. Crackers stored in plastic bags or plastic storage containers will stale within a few weeks.
